Cast iron heat diffuser for gas hobs

This cast iron plate has a simple job: it absorbs the heat of the flame and spreads it evenly under the pan, with no hot spots. Food cooks at a steady temperature, without sticking or burning, and without the need to watch or stir constantly.

It also makes it possible to use on gas cookware that could not otherwise go on it: pans without a radiant base, earthenware or terracotta dishes find a reliable go-between here. The outside base of the cookware is also protected from direct contact with the flame, which limits blackening over time.
