This extendable stainless steel square or rectangle frame is the ideal tool for making beautiful entremets, mousses, creams, sponge cakes, Joconde cookies and other pastry preparations requiring clean, precise assembly. Graduations on the outside allow precise size adjustment.

Thanks to its innovative adjustment system with notches on the outside (top), the size of the frame is easy to set and remains perfectly stable during preparation. The result is smooth, precise and airtight on a flat cooking surface.

Made from spring-loaded stainless steel, the frame is both flexible for easy removal from the mold and durable over time. It will not oxidize, even at low temperatures.

Dismountable, the frame is easy to clean and store. Deep-freezer, freezer, refrigerator and oven-safe.

Available in square or rectangular format:

• square: extendable from 20 x 20 cm to 37 x 37 cm, with a fixed height of 5 cm
