The revirer knife is an emblematic tool, historically dedicated to an exceptional cheese: Roquefort.
Its distinctive shape is not a stylistic effect, but the trace of an ancient, very precise use. Originally, this knife was used in ripening cellars to remove the natural deposit that formed on the surface of cheese wheels. Today, although it has been forgotten over the decades, it remains the benchmark for cutting Roquefort cheese neatly, cleanly and without crushing it at the table.

Its long, wide, tapered stainless steel blade ends in a very fine, slightly curved tip, ideal for slicing marbled pasta without crumbling it. The olive wood handle ensures a stable, comfortable grip.

Manufactured in France, in a cutlery factory with the Entreprise du Patrimoine Vivant label, this knife perpetuates over 150 years of cutlery-making tradition. It is a specialty item, both rare and true to its original use.
